Vegan Shepard's Pie W/ Cauliflower Mash!!




Ingredients :

4 cups Cauliflower Pre package cauliflower rice (you can purchase an actual cauliflower and chop it up too but the package helps speed up the process lol )

2 tablespoon of garlic powder

1 tablespoon kosher salt

1 cup vegan mozzarella cheese

1 cup vegan cheddar cheese

1 1/2 cup of almond milk ( or plant base milk of choice )

1 bag of Morning Star Crumbles

1 whole sweet onion chopped

2 cups of carrots chopped

1 green pepper chopped

1 cup of mushrooms

6 garlic cloves chopped

1 tsp kosher salt

1 tablespoon olive oil


Instructions :

** Preheat Oven to 350 Degrees**


**Chop Veggies (Carrots, Onions , Garlic , Peppers, Mushrooms)


1.Boil 4 cups of cauliflower rice or florets until tender

2.Drain water and add to blender or food processor

3.Add , salt , garlic powder and almond milk

4.Blend until smooth (mash consistency to your preference) . Set aside



























5. In a large frying pain , on medium-high heat , add onions , peppers , mushrooms , garlic , carrots , salt and crumbles

6. Sauté mixture and cook for about 10-15 minutes

7.In an oven safe baking dish , pour "meat" mixture in and cover with cauliflower mash evenly on top.

8.Optional *** I sprinkled some of the vegan cheddar cheese on top (being extra) but you don't have to.

9.Place dish in the center rack and bake for 45 minutes .

10. Let cool for 5 minutes , cut and serve!!
