Ya'll won't believe how are AMAZING these Mahi Mahi Tacos are and made in the air fryer !! So quick and easy , you'll be making this recipe once a week ! Check out the recipe below and watch me cook up this FLY meal here !


6 Mahi Mahi Filets

2 Whole Limes

1 Pre Packaged Mexican Street Corn

2 Cups Portobello Mushroom ; sliced

2 Cups Sun-dried Tomatoes ( sliced if not already purchased julienne style)

1 Red Onion ; sliced

2 Tbsp White Distilled Vinegar

2 Tbsp Coconut Oil

2 Tbsp Garlic Powder

2 Tbsp Onion Powder

2 Tbsp Creole Seasoning

1/2 Tbsp Kosher Salt

6-8 Corn Tortillas ( or as many as ya'll can eat! )

** Disclaimer : I usually season everything based on the whispers of my ancestors and hear them loud and clear when they tell me stop! That being said , adjust seasoning amounts based on your preference and what feels good to you! Trust your "cookstincts"!


  1. Thaw and rinse mahi mahi filets thoroughly ( when using the air fryer , you can honestly throw it in there FROZEN , season on it and all , FROZEN and it will still come out great but I thawed them this time)

  2. Slice red onions , mushrooms , sun-dried tomatoes and set aside

  3. Squeeze lime juice all over the filets

  4. Season mahi mahi with garlic powder , creole seasoning and onion powder

  5. Sprinkle coconut oil over filet and rub seasoning mixture and lime juice thoroughly

  6. Place mahi mahi filets in air fryer cooking at 370 degrees for 15 MINUTES !! (adjust temp and time dependent on your own air fryer )

  7. While your fish is getting fly and juicy, grab your medium/large frying pan to get your veggies together

  8. On a medium-high heat , pour a tablespoon of coconut oil, sprinkle kosher salt (salt bae style) and sauté red onions until translucent. You could stop there but if you want to kick it up a notch , PICKLE THEM TOO !

  9. To pickle onions simply add a couple cap fulls of white distilled vinegar to sautéed onions . Cook for a couple more minutes, remove from heat and set aside on a plate

  10. Light rinse the frying pan so you can get rid of vinegar taste

  11. Back on medium high heat, sauté your sun-dried tomatoes and mushrooms for about 5-7 minutes and set aside

  12. If you purchase the pre package corn like I did , this is a great time to heat in the microwave

  13. Next on that same frying pan , fry those corn tortillas to your crispy meter preference

  14. Snatch those mahi mahi filets out the air fryer , give a light chop and begin to assemble your tacos !!
