Fly Vegan Pancakes !


Ingredients :


- 1 1/4 cup flour ( I used almond flour but any flour will work fine)

-1 Tablespoon coconut sugar

-1 Tablespoon baking powder

-1/4 Teaspoon sea salt

-1 cup almond milk (or non-dairy milk of choice)

-2 Tablespoons of water

-2 Tablespoons olive oil



Instructions :


1. In a medium bowl , combine flour, sugar , baking powder, and salt. In a separate bowl combine the almond milk , water , and olive oil. Add the dry ingredients to the wet ingredients. Stir gently just until combined/moistened.


2. Lightly spray a large skillet. Heat the skillet to the medium high heat. Each pancake will be about 2 large spoonfuls of batter (unless you want massive pancakes and in that case , do you!) .


3. Flip the pancakes when the top starts to bubble and you can slide the spatula under the pancake. Both sides of the pancake will be golden brown once it is done cooking. Serve immediately!


Toppings !

Top your pancakes with whatever you like ! I chose strawberries but you can top with your favorite berries , bananas or just drench with syrup and ENJOY !

This recipe will yield about 8-10 pancakes.
